A lot of you have been asking, "Laur, what exactly are you cooking up this week and can you do my meal planning for me?"
Well, I heard ya and I want to help. I'm sharing an example of my exact thought process to approaching grocery shopping and meal planning for a healthy week ahead!
First, I knew I'd be working from home until mid-day Friday, when we leave for a wedding celebration for our friends who live in North Carolina! Even though I'll be gone this weekend, I like to have a grocery and meal prep plan so I can focus on just enjoying our trip!
Plus, our fridge on Sunday was pretty full! I'd done a big grocery haul the week before to stock up on essentials. 😃 Since we do have stuff in our fridge, freezer and pantry, I took advantage of that to save money this week!
The name of the game was EASY and FAST!
I was short on time Sunday (movie date with my hubby, studying for my final exams for integrative nutrition school, and teaching a workout class). It’s nice to have my favorite “go-to” recipes; enough so that meals aren't boring, but not so many that I feel overwhelmed with prep. I also made multiple servings of each recipe (we're just a family of 2!) so that we can have leftovers throughout the week.
